I finally got around to making another recipe for my cooking challenge and this one got smiles all round!
For those who aren't aware a while ago I decided to cook all the recipes from one of my many cook books (yes Julia&Julia style). So I picked Jamie Oliver's "Happy Days with the Naked Chef" for my first challenge.
Last night I decided to make 'My Old Man's Superb Chicken' page 185. It consists of sauteed mushroom, garlic & parsley stuffed into a chicken breast which is then wrapped in puff pastry and baked till cooked through and golden brown. Topped off with a cream, white wine & wholegrain mustard sauce. It was surprisingly quick and easy to put together, although it took longer than the given 35 mins to cook. I left it for over 45mins and it was still perfect (I freak out about under cooking chicken). The smells all along were mouth watering, I was just hoping the smell would be as good as the taste! And it was, the chicken was tender and moist, pastry crisp and the sauce was a perfect acidity balance for the palate. I will definately have to try this for a dinner party in the future (well once we move and I have a dining table again!).
